Title: need general help with mages in tactics

Im still pretty new to BG2s spell system but Im willing to learn (the hard way). What are some general tactics to deal damage to a mage that starts the battle with protection of cheese?

What spells should I cast and in what order to get through?
Currently I only have access to lvl 5 spells. What spells should I use?
What spells should I look out for in the future that will help me kill mages easier?
