You must edit the relevant .tlk reference. Open you baldur.ini, find the line Strref On=0 and modify it to 1. Then you will have the possibility to see the tlk. reference numbers in the game. Find in the game what number has the "Fighter". Then use some tlk editor (Edit string tool in DLTCEP) and overwrite this string reference according to the number that you've found...

That works, but that changes ALL references to that strref. If you're only wanting to change a single case, as for example if you're making a fancy kit or something, use an effect.

#103 (0x67) Text: Change Name [103]
    Parameter #1: String Reference
    Parameter #2: Irrelevant
    Description:
Alters the name of the targetted creature(s) to the strref
specified by the 'String Reference' field. When used with
a duration timing, after the duration, the name will be
    set to a blank entry.

Using a spell with the above affect for example is quite simple.
