I have been through Tutu, not quite far yet. But far enough to notice that several characters are dual-wielding and also, using weapons quite far removed from their originals.

Khalid and Kagain for example are dual-wielders rather than sword and shielders.. though is this by popular demand, and, is it best to change it with Shadowkeeper if we wish them to be closer to the originals.

Also, I was going to ask, is there any way that we could have an addition to Tutu's Weidu installation to add parts of the refinements mod that restores BGI paper dolls, shields and helmets to BG Tutu, so that we can have original helmet animations and shields which are more suited to the north.. with the more exotic looks suiting Amn better.

No one could dual-wield in BG1 and, thus, it's impossible to tell who would have had dual-wielding proficiencies if they existed (except, obviously, for the rangers).  No characters are "using weapons far removed from their originals," however.

Just to emphasize that particular point: Khalid and Minsc get their two points in dual-wielding automatically just by being rangers.
