As the title says, I'm advanced to chapter 7 but want to play more quests (including Sellswords) before moving on to Irenicius and finishing up SoA. Any way I can get Sellswords to start?

You can go to the Promenade, and Sellswords will begin - a boy will hand you a note. (The mod should be installed, naturally).
I also recommend Back to Brynnlaw(you may even like it more) - a cloaked woman will be waiting at the Promenade near Adventurer's Mart.

Yeah, I went to the Promenade, and no boy. (I waited a while).
I reconfirmed the mod was installed correctly by running the installer a second time and choosing reinstall. I am not new to WeiDU mods.

Perhaps if I knew the creature code for the boy, or the proper variable, I could induce the quest to start....

Ah, you are correct. The boy and the drow are set to appear in Chapter 6, assuming that no one will return to Athkatla at Chapter 7, but everyone will visit the Promenade in Chapter 6 for Ribald's new items.
I will amend the chapter counter in the next version, so there's no inconvenience for you - in the meantime, I apologise and here's a workaround:
For the Sellswords:
CreateCreature("O#LLMess")
For Back to Brynnlaw:
CreateCreature("O#MYST")

Unfortunately, while this created the messenger, he just stands there and can not be spoken with....

The same appears to be true of Back to Brynlaww, where the Mysterious Figure also won't converse with the party.

Correct again, and sorry again(I really shouldn't be playing SWTOR until 3am, it doesn't work so well for my brain). Here are the variables:

(Perhaps include these instructions in the FAQ for future "outside-the-box" players?)

I'll just unlock both quests for Chapter 7 in the next version. :)
